Positioning Mario inside most dark entrances in Super Mario Odyssey (such as small entrances to bonus areas; note that this does not work with the entrance to the Odyssey as it uses a different lighting system) reveals that the darkness is achieved by simply setting up a vertical black wall shortly before the loading zone in the door.
If Mario is very carefully nudged as far as possible inside the doorway without touching the loading zone, and is then turned around, we can see that the black wall cuts through his model, causing only parts of him to be displayed. This also has the tendency to cut between the sclerae and the irises of his eyes, causing him to appear to have irises on a black background.
